It's been a while since I posted. I have been busy doing lots of cooking classes at Airfield Estate - check out the website for up to date classes and also walking food tours with Delicious Dublin Food Tours.
Anyway I just got back from a wonderful five days Bord Bia Bloom doing many cookery demonstrations in the beautiful National Dairy Council show garden featuring delicious Irish dairy.
Over the five days I made a lot of custard!
Here's what I made:
Butter and Ricotta
Soda Bread, Cottage Cheese and Chutney
Turkish Eggs, Yoghurt flatbread & Labneh
Seafood Crumble; Milk Tart
Jambons & Rice Pudding
Chicken Empanadas & Portuguese Custard Tarts
Creamy Fennel Soup
Rhubarb Fool
Irish Rarebit (Welsh rarebit made even better with Guinness)
Lemon Posset
